Salmon Loaf
2 cups Salmon (one large can) 1 egg
liquid from Salmon can + milk to measure 3/4 cup or
just use 3/4 cup milk
1 1/2 cup cracker crumbs (Ritz) 1 Tbs. lemon juice
1 Tbs. finely chopped onion 1/8 teas. salt
1/8 teas. pepper
Grease a bread loaf pan. Blend egg into Salmon throughly. Stir in the remaining ingredients. Please note that the amount of onion may be less or more to your liking. You may like to add just a little more salt and pepper, but don't over do it!
Spoon mixture lightly into prepared pan. It will look like a meatloaf.
Bake at 350 for 45 minutes. Enjoy!!
Cinnamon Applesauce Salad
Please read through before beginning!!
2--3oz. pkgs. Orange Jello 1+3/4 cup boiling water (divided)
3/4 cup cold water 1 cup applesauce
1 cup (8 oz.) sour cream 1/4 teas. cinnamon
Dissolve 1 pkg. jello in 1 cup boiling water. When desolved, stir in the 3/4 cup cold water. Chill until set, but NOT firm.
Meanwhile dissolve remaining box of jello in 3/4 cup boiling water. Cool just slightly and then blend in 1 cup applesauce, sour cream, and the cinnamon. Chill just until it starts to thicken.
Spoon the jello with the applesauce on top of the plain jello.
Chill until firm. (At least 3 hours.)
You may use either a round casserole type dish or a square or oblong pan. Just be careful not to let either part set up completely befor adding everything together. Nice Fall recipe!! If serving company they will be amazed.
ABC Salad
1 large red delicious apple/cored/chopped/peeled if you prefer
1 nice stalk broccoli/chopped
2-3 carrots/chopped
1/2 large head of cabbage/chopped
1 large onion/ chopped
Chop everything until fine. I use my food processor.
Dressing
1/4 cup oil 1/4 cup vinegar
1/3 cup sugar ( you can use 8 packs Equal)
1 Tbsp. + 1 teas. lemon juice (I use bottled)
2 teas. yellow mustard
1/4 teas. salt 1/4 teas. pepper
1/2 teas. paprika
Blend these ingredients thoroughly. I use a blender. If mixing by hand, I would suggest a whisk, or a hand mixer. This is a really good salad, and keeps very well for 4-5 days. Make it at least 1 hour before serving, and the longer it sets the better it gets. When you pour this mixture over the chopped veggy's, be sure you mix it all together very well. This will blend the flavors.
You could add chopped red or green peppers to make it Christmasy, but I wouldn't add very much to it as their flavors can get pretty strong. It's all to YOUR liking. It can be a meal in it's self I have it often for lunch. Sometimes I get carried away chopping veggy's, so I just double the dressing. I like it to be good and moist.
This is a great way to get your kids to eat their veggy's. If they don't see you making it, they won't know what ones they are eating!!!
Cottage Cheese Salad
1 16oz. tub of cottage cheese 1 8 oz. can crushed pineapple, drained
8 oz. Cool Whip drained
1 11 oz. can Mandarin oranges 1 sm. (3 oz.) orange jello
Drain canned Mandarin Oranges, and cut into small pieces. Drain the crushed pineapple. Try to get both drained really well. Add all ingredients and mix well. Use the jello powder right out of the box. DON'T add any liquid to jello.
Let set for several hours before eating.
For those who might not be fond of cottage cheese, you really don't tasteit in this recipe. You will mostly taste the orange flavor. It makes a pretty Easter dish and is sooo good.
