ABC Salad
1 large red delicious apple/cored/chopped/peeled if you prefer
1 nice stalk broccoli/chopped
2-3 carrots/chopped
1/2 large head of cabbage/chopped
1 large onion/ chopped
Chop everything until fine. I use my food processor.
Dressing
1/4 cup oil 1/4 cup vinegar
1/3 cup sugar ( you can use 8 packs Equal)
1 Tbsp. + 1 teas. lemon juice (I use bottled)
2 teas. yellow mustard
1/4 teas. salt 1/4 teas. pepper
1/2 teas. paprika
Blend these ingredients thoroughly. I use a blender. If mixing by hand, I would suggest a whisk, or a hand mixer. This is a really good salad, and keeps very well for 4-5 days. Make it at least 1 hour before serving, and the longer it sets the better it gets. When you pour this mixture over the chopped veggy's, be sure you mix it all together very well. This will blend the flavors.
You could add chopped red or green peppers to make it Christmasy, but I wouldn't add very much to it as their flavors can get pretty strong. It's all to YOUR liking. It can be a meal in it's self I have it often for lunch. Sometimes I get carried away chopping veggy's, so I just double the dressing. I like it to be good and moist.
This is a great way to get your kids to eat their veggy's. If they don't see you making it, they won't know what ones they are eating!!!
Bar B Q Sauce
2 Tbsp. melted butter 1/3 c. ea. green pepper
1 can tomato soup onions
4 teasp.worchestershire sauce 2 Tbsp. brown suga r
1 Tbsp. mustard 1 Tbsp. vinegar
Cook your gr. pepper and onions in melted butter until
tender. Add rest of the ingredients and heat until hot.
It is not necessary to boil, but won't ruin it if it does. Just don't let it stick to the pan!!
Use this recipe over your favorite meatball recipe. Serve over rice. It is also wonderful on meatloaf. Pour over the top about 1/2 hour before meatloaf is done. It is also great poured over a roast the last few minutes of baking, or use as a pour-over sauce at the table.
It may also be used with pork. Add it to a roast or drizzle a little on your pork chops.
You can leave out the gr. pepper and the onions if you want to and this is just as good. It is a good all around recipe with many uses. You can probably even think of more ways to use it. Mixed with pulled pork for sandwiches would probably be fabulous!!! You can use this with things made on top of the stove or place right in the oven with your favorite dishes.

Cottage Cheese Salad
1 16oz. tub of cottage cheese 1 8 oz. can crushed pineapple, drained
8 oz. Cool Whip drained
1 11 oz. can Mandarin oranges 1 sm. (3 oz.) orange jello
Drain canned Mandarin Oranges, and cut into small pieces. Drain the crushed pineapple. Try to get both drained really well. Add all ingredients and mix well. Use the jello powder right out of the box. DON'T add any liquid to jello.
Let set for several hours before eating.
For those who might not be fond of cottage cheese, you really don't tasteit in this recipe. You will mostly taste the orange flavor. It makes a pretty Easter dish and is sooo good.
