Favorite Fruit Salad
1(20oz.)can crushed pineapple, undrained 2/3 cup sugar 1 cup celery, chopped 3oz. lemon jello 1 cup cool whip 8oz. softened cream cheese 1 cup diced apple 1/2 to 1 cup chopped nuts/Walnuts or Pecans
Bring the pineapple and sugar to a boil. Boil for 3 minutes. Remove from heat and immediately add jello, stirring until dissolved. Add cream cheese. Stir until mixture is thoroughly combined and cool. Fold in apple, nuts, celery, and the cool whip. Pour into 9" square pan and chill until firm. Cut into spears and serve on lettuce leaves if you like. I love this salad ANY time of the year. It is a great one to serve at holiday time because you can make it early in the day or even the night before. It keeps well 2-3 days, but it will never last that long.
Easter Cole Slaw
1 med. head cabbage, shredded 1 cup miracle whip
1 pkg. colored marshmallows 1 cup cool whip
Salt & pepper to taste 1/4 tes. vanilla
1 sm. can crushed pineapple, drained
Mix all ingredients together well. Refrigerate unti ready to serve.
I suggest making the night before or at least first thing in the morning as it is best after setting for a while.
You may use packaged shredded cabbage to save some preparation time.
This dish is delicious ANYTIME of the year, but pretty with the colored marshmallows at Easter. It is just as good with plain marshmallows also.
Crockpot Swiss Steak
2 lbs. round steak (cut about 3/4" thick)or Swiss steak
1 Large Onion, thinly sliced
1 10 oz. can mushroom soup
Salt and Pepper to taste
Cut round steak into serving size pieces. Season with salt and pepper to your liking. Place in crockpot, add sliced onion. Spread soup, right from the can, over top. (No water added to soup.)
You may double this recipe if serving company. I like to start my crockpot on high for the first hour, but this is not necessary. Reduce to low and cook for 8 hours. A little less time if starting on high.
This is sooo good! I found it in a cookbook that came with the first crockpot I ever owned. Hate to say how long ago that was!!!

Oven Macaroni and Cheese with Sausage
3 Tablespoons butter 2 cups Shredded Cheddar cheese
Salt 1 quart milk
Pepper 1 pkg. Smoky Link Sausages
Heat oven to 350. Place 3 tablespoons of butter in a pan or glass dish at least 13" x 9". Place in oven as it is heating to temperature, and melt. Watch carefully and when melted, remove from oven and add your uncooked macaroni, salt and pepper. I would guess that I use close to a Tablespoon of salt and about 1 teaspoon of pepper. Use whatever amount of these two ingredients to your liking. I don't measure. Just be sure to stir it up well. You want all of your macaroni covered with butter and seasoning.
Now sprinkle your shredded cheese on top. Be sure to cover all the macaroni. Carefully pour 1 quart of milk over the entire mixture.
Place in your 350 oven for 45 mins. Remove from oven and add your Smoky Link Sausage over top. Return to oven and bake for 15 more mins.
You may use any pre-cooked sausage of your liking. Just be sure it is pre-cooked. I usually serve this with warm buttered cornbread. We pour real maple syrup over the cornbread. Yummy!!! This is the best comfort food in the middle of the winter. Just makes you feel warm all over!!!!

Pumpkin Bars
1 cup oil 2 cups canned pumpkin
2 cup sugar 4 eggs
2 cup flour 2 cup flour
1 teas. baking soda 2 teas. gr. cinnamon
Mix above ingredients together well. Place in a greased
cookie sheet.
Bake at 350 for 20-25 mins.
For frosting: 3 oz. cream cheese 1 teas. vanilla
3/4 cup stick butter 1 3/4 cup powdered sugar
Mix together well and spread on bars when they are cool.
